Ready in about 20 minutes. Makes 8 servings.
1 lb. chicken breast, cubed
2 c. chopped red onion
1 red pepper, sliced into strips
1/2 tsp. ground black pepper, divided
3 c. low-sodium chicken broth
1/4 c. fresh flat leaf parsley, chopped
1 medium Granny Smith apple, cored and cubed
1 c. baby lima beans
1/4 tsp. kosher salt
1/8 tsp. cayenne pepper
1/2 c. cashew butter, unsalted
In a large non-stick pan, saute chicken, onions, pepper and 1/4 teaspoon of black pepper until chicken is cooked through. Add broth and parsley. Cover and bring to a boil. Add apple, lima beans, salt, cayenne pepper and remaining black pepper to the broth. Cover and simmer for 10 minutes. Uncover and whisk in cashew better until well blended.
