Tzatziki, my way!

Great on Spicy Feta Turkey Burgers
original recipe from: The Eat-Clean Diet for Families & Kids.
Recipe below has been altered to fit my taste.

2 c. Greek Yogurt*
1 large English cucumber, peeled ans seeded, finely chopped
1 tsp sea salt**
1 Tbsp best-quality olive oil***
juice of one fresh lemon
5 garlic cloves, peeled and finely minced
1/4 cup fresh cilantro, coarsely chopped
Sea salt & black pepper to taste

Place chopped cucumber in a colander and sprinkle with sea salt. Mix the salt into the cucumber. Cover with plastic wrap or a plate and allow the liquid to drain from the cucumber for several hours.

Using a paper towel, remove any excess liquid from the drained cucumber. Transfer to a mixing bowl. Add the yogurt and remaining ingredients and mix until well combined.

Original Recipe instructions:

*In the original recipe it says 6-24 hours in advance, using plain nonfat yogurt not Greek Yogurt,
thicken by setting in a fine-mesh sieve over a large bowl. Line it with dampened cheesecloth. Place yogurt in the sieve. Cover with a large plate and set in refrigerator. Allow to drain, preferably overnight. Discard liquid, keep thickened yogurt.

**2 tsp sea salt

***2 Tbsp best-quality olive oil
