Ingredients:
12 eggs
1 cup cottage cheese
1 cup Trader Joe’s brand Cheddar & Gruyere, shredded
2 tsp. cornstarch
3/4 tsp salt (optional)
coconut oil
6 slices bacon, cooked and cut into 4 pieces
additional shredded cheese to top
boiling water
Hardware:
24+cup cupcake pan
silicone basting brush
Cookie sheet with edges, larger than cupcake pan
Instructions:
Preheat oven to 300*
Blend all ingredients except bacon and additional cheese until frothy, set aside.
Grease your cupcake pan - some use nonstick cooking spray but I have had the best luck with coconut oil and a silicone basting brush.
Pour egg mixture into cupcake pan - filling only 1/3 - 1/2 full. Place bacon pieces on each egg bite and sprinkle with a little of the additional cheese.
Place cookie sheet on middle rack of your oven. Pour the boiling water onto cookie sheet to no more than 1/4 full (less is fine).
Place cupcake pan on cookie sheet and bake 35-50 minutes or until done. Enjoy right away or store covered in your fridge. To re-heat place in a greased baking dish that has been placed on a cookie sheet with boiling water in it and in a 200* oven. Lay a dampened towel over the top and heat until warmed.
